#Cupping is a great way to de-stress, improve circulation, and relieve pain. As part of a stress-reduction regimen, I get cupping and #acupuncture done each week. Often sitting for long periods of time, poor posture, and tension in the shoulders from stress, will result in pain and the muscles of the back overcompensating and tightening where they wouldn’t otherwise. I highly recommend cupping to avoid getting “student shoulders.” Don’t lose your health while studying health! .

1 lb. boneless skinless chicken breasts
1 15 oz can black beans, rinsed
1 cup frozen corn
2 bell peppers chopped
1 white onion chopped
1 15 oz can fire-roasted tomatoes
1/4 cup chopped cilantro plus more for garnish
3 cloves garlic, minced
1 tbsp cumin
1 tbsp chili powder
1 tsp kosher salt
2 c low-sodium chicken broth (I used 4 c)
1 cup shredded Monterey Jack
1 tbsp extra-virgin olive oil
Sliced avocado for serving
Sour cream for serving
Lime wedges for serving
1. In a large slow cooker, combine chicken, black beans, corn, peppers, onion, tomatoes, cilantro, garlic, cumin, chili powder, salt, oil, and chicken broth.
2. Cover and cook on low until chicken is cooked and falling apart, 5-6 hours.
3. Shred chicken with fork, top soup with cheese and cover to let melt, 5 Mom more.
4. Serve soup, tortilla chips, avocado, sour cream, cilantro, and lime. 🥘🥑 🌽
